Gastronomical accompaniments:
Excellent with strong flavoured dishes such as roasts, grilled game meat, seasoned cheese and pasta.
Vinification:
The grapes harvested manually are crushed within the following two hours. Crushing is done by means of a winepress which first separates the grape stalk from the grapes. The crushed grapes are then placed in a glass cement fermentation container and cooled with thermal exchange plates. This type of container prevents sudden temperature changes. At the end of quick fermentation the must is placed in steel tanks where slow fermentation occurs, then it is cleaned and allowed to rest for about six months after which it is decanted in oak casks where normal maturation and natural micro-oxygenation occurs. It is then bottled and refined for six months minimum.
