Vinification:
The grapes harvested manually are crushed within the following two hours. Crushing is done by means of a winepress which first separates the grape stalk from the grapes. The crushed grapes are then placed in a glass cement fermentation container and cooled with thermal exchange plates. This type of container
prevents sudden thermal stress.
